250 Calorie Pancakes with Just 2 Ingredients - Day 4/90

This recipe has quickly become my new favorite whenever I am craving heavy carbs or something sweet - it checks both boxes! Not only that, but these pancakes are made with just 2 ingredients, and are less than 250 calories​!
After staying up until 3 AM last night, my short 4 hours of sleep certainly took its toll today. Have you ever woken up and walked around, but it almost felt like you weren't exactly... alive? That's how it felt for me today as I jumped out of bed and briskly walked to the bathroom to get ready in 15 minutes before I'd be late to work. I knew today would be even more of a struggle than yesterday, and boy, was I right.

I grabbed a Quest Lemon Cake bar, which Quest Nutrition ever so kindly sent me an entire box of (thanks, Quest!) and was out the door. I didn't give myself enough time to make any sort of tea latte, or even grab a Yerba Mate on the way to work, so you can already tell which direction my day was headed  😂 To be honest, it was a super overwhelming and stressful day. People kept adding more and more onto my plate to the point where I actually ran out of room on my to-do list. * Speaking of to-do lists, I may or may not be launching my own brand of daily organization products soon - stay tuned ;) * 

If the last 3 days didn't teach me how important sleep, routine, and early productive mornings are, today certainly did! I had my protein bar for breakfast and a paleo salad from Chipotle (love this meal!) for lunch. Other than that, the only other thing I was looking forward to was going home and taking a nap!

Now, I've got to give a shoutout to my incredible boyfriend for surprising me with a salad from my favorite local restaurant ready to eat in my fridge upon my arrival home! What a relief! No cooking, no thinking - just eating. My salad had mixed greens, spinach, roasted red peppers, artichoke hearts, black olives, tomatoes, onions, and avocado, and then I added my own ground turkey on top with cilantro-lime dressing. It was so delicious, but having eaten only salads and a protein bar, you better believe I was still hungry. 
BRING IN THE PANCAKES!

​Okay, these are the 
star of the show. I've already mentioned these in another blog, but they are just too good. I had to make an entire blog post about them. I got this recipe from the queen, Cassey Ho of Blogilates. I'm telling you... these pancakes will satisfy any craving you have. Sweet? You got it! Savory? Coming right up! Carbs? To the max.

So what's the catch? These pancakes are made from 2 natural ingredients. Ready for the recipe? Here it is:

Ingredients:
1 Banana
2 Eggs

1. Mash a banana in a bowl until you get a creamy consistency.
2. Add 2 eggs and combine.
3. Pour the batter into a pan over low-medium heat and flip once bubbles start to form.
4. Get creative and add your toppings!

Aren't these to die for?! Once you add the maple syrup or honey and all of your other toppings, it genuinely tastes like a pancake. And it's less than 250 calories! How can you beat that? My toppings included honey, PBfit powder, cacao nibs, and raspberries. It was absolutely perfect. Let me know if you try it, and comment which toppings you used! 

After the pancakes, I did a quick 15 minute Pilates workout. Nothing too crazy for this tired girl, although those pancakes did give me a BOOST of energy and definitely increased my serotonin levels :)

I didn't work on anything for my business today, but I do have a full day of learning planned for Saturday! I purposely said no to plans and decided to make it a solo day as I focus on becoming a better entrepreneur. So far, I'm taking a course on SEO, social media marketing, and how to develop an engaged audience & drive traffic to your platforms. I'm excited!

I feel terrible when I don't get my 8 hours LOL!! How do you do it??

Haha, I make sure to eat whole foods throughout the day and drink lots of water! That always gives me sustainable energy to stay awake and productive during the day. I also drink a chai or matcha latte if I need a little extra help ;)
