What do you reach for when you haven't prepared your meals for the day? A candy bar? Chips? Well, I've got the best pre-made paleo snacks for you right here.
Ahhhhh, what a glorious morning. The birds are chirping, the sun is shining, and I woke up before my alarm! Psych. The garbage truck is loudly beeping outside, the air is filled with smoke, and I snoozed my alarm 5 times. I think I'm just going to give up on the idea of getting up early this week and start fresh this weekend. They say having expectations is a sure way to be disappointed, so I'm just going to go with the flow ;)

For breakfast, I made the matcha version of my chai tea latte, which was obviously delicious. I swear, I make the best matcha latte I have ever had in my life. If you're interested in the recipe, let me know, and I will make a blog post about it! Also, this is the collagen I use. It's super important to get a high quality collagen, so this is the Sports Research Collagen Peptides brand I use, which also happens to be the cheapest brand I've found that also has the highest level quality I could ask for!

I got to work feeling tired (what's new) and a little grumpy honestly. The lack of sleep was definitely catching up to me and I needed a nap. Woe is me. But I prevailed and made some great things happen in my role!

I didn't make anything for lunch (poor meal planning, it's something I'm working on for next week too), so I figured I'd run to one of my favorite stores to see if they had any good paleo options, and BOY did they! I don't know if you've ever been to Grocery Outlet, but it has exceeded my expectations each and every time. They have a section of NOSH (natural, organic, sustainable, and health) foods, which is all about healthy options, including snacks, drinks, superfood powders, and more for a fraction of the price you would pay literally anywhere else. I'm obsessed. For example, I saw a superfood powder that I really wanted to try. It was $60 online and only $14 in the store - WHAT! If you haven't gone yet, you need to. Anyways...

I knew they carried a paleo line of frozen meals, so I grabbed the Beetnik Beef Chili one, which was a 10/10 btw, and moved on to find some good snacks. Now, I've been craving chips since this whole challenge started. They're my weakness and I eat the entire bag every time just in the car ride alone, no matter the number of servings in that bag. No joke. Anyway, I wasn't expecting to find anything chip-like that I felt okay eating during this challenge, until TERRA Cassava Chips cooked in coconut oil with just a dash of salt started calling my name (can't find them on Amazon, but linked the plantain chips that are just as healthy and delicious!). Totally paleo-friendly! I was so happy and, as expected, ate the entire bag... whoops!

Along with the chips, I also picked up a bag of organic dried mangoes from Just About Foods (linking the Trader Joe's dried mangoes here since I can't find the other ones online... and these are secretly my favorite!) and a super sized box of LARA bars, which was only $4.99 for 20 bars! That's 25 cents a bar, guys. I'm tellin ya - go to Grocery Outlet!

I love these snacks because they each have less than 6 ingredients, and they're all made up of real, natural foods. It's so easy to reach for the cheap & convenient snacks like a bag of M&Ms or hot cheetos. Don't get me wrong, both of those are absolute fire, but they don't make you feel the best. I mean, what is that bright orange/red dust made out of anyway? I sound like a spokesperson for Grocery Outlet, and let me tell you, I would GLADLY be one, but this really has made healthy options affordable, and I am grateful for that. So, shoutout to you, Grocery Outlet!

Once I got home from work, I made a salad with chicken, avocado, & salsa (lol, that pic looks nasty, but I swear it was delish!) with a side of carrots, and pretty much jumped right into more work, but this time, it was my work for my business! I started one of my courses, which was all about being clear about who my audience is. Who am I doing this for? What is my "why?" How do I want to help my audience? What can I help them achieve? Who can I help them become?

It was really inspiring and helped me remember why I'm doing what I'm doing. Yes, it's for me and I'm creating a lifestyle that makes me happy and makes me feel whole, but I wouldn't be doing this at all if it wasn't for you. I'm here to help you make your dreams a reality and live the life you have always dreamed of living. I'm here to help you gain the confidence and self-love that is already inside you, scratching at the surface, and ready to come out. I'm here to help you know your worth and fight for what you believe in and get all of the beautiful experiences you want out of this life. I'm here to help you start your business, get that promotion, launch your side hustle, and finally be financially and happily independent, while having been surrounded by your tribe who has been supporting you and cheering you on every step of the way.

Well, that was sappy... I don't regret a moment of it because it's all TRUE! I hope you all had an amazing day and an even better tomorrow. Time for me to do a nice, relaxing stretching routine and wind down with some self-love and skin care.

Hi Leah! What does a paleo diet do?

Hey, Ashley! The paleo diet is intended to mirror that which our ancestors ate, so some people like to say it's the diet that we, as humans, are most biologically created to consume. Do your own research to help you determine whether or not that's true ;) but i just like it because grains and lots of carbs tend to bloat me or make me feel full/heavy in an uncomfortable way. So, I'm just trying it out to see if I feel better! Hope that helps!!
